Georgian Bay Smoked Fish Trio
Smoked Fish:
- 1 fllet of smoked splake
- 1 fillet of smoked Georgian Bay whitefish
- 1 fillet of smoked troup
Method: Remove skin from fish. Slice into 2-inch strips and arrange on a platter
Horseshoeradish Sauce:
- 6 oz sour cream
- 2 oz horseradish
- 1 oz lemon juice
- dash Tabasco
- dash of Worchestershire
- salt and pepper to taste
Method: Place all ingredients into a stainless mixing bowl and whisk until well blended.
Caper Dill Sauce:
- 6 oz mayonnaise
- 1 tbsp of capers
- 1 oz lemon juice
- 1 oz chopped dill
- dash Tabasco
- dash Worchestershire
- salt and pepper to taste.
Method: Place all ingredients into a stainless mixing bowl and whisk until well blended.
